For Mother's Day, my mom, mom-in-law and I combined our culinary efforts to prepare a delicious meal for our families. My job was to provide the bread and fruit. After a busy week and trip to the store without remembering to buy rolls, I decided that necessity was great motivation to experiment with homemade rolls. Surely it couldn't be as difficult as I had always thought. I was pleasantly surprised that this recipe for "Just Like Lambert's" rolls was super easy and super yummy! Now I have no idea where Lambert's Cafe is but gather that their rolls are famous. After tasting them myself, I think they rival the Quincy's Rolls from my childhood when Quincy's was popular here in the south. This recipe will find a permanent place in my cookbook. 

Again, this recipe was found on Tammy's Recipes, and  I followed the recipe exactly though using light butter instead of regular. I followed the directions for mixing with a bread machine, but she gives instructions for using a mixer as well. My dough rose so well that the finished rolls were huge! I probably could have made more than 12 rolls if I had known. 
TIP for Rising Your Dough: I turned my oven on warm (150*) about 15-20 minutes before I handled the dough. Once it was preheated I turned it off and set a small pot of water on the stove to boil. Once it started boiling, I set it in the warm (but turned off) oven.  Then when I got to the step about letting the dough rise, I put the muffin tin in the warm, moist oven for about 15-20 minutes. When I checked on them, they had risen beautifully and were ready to bake! Try the recipe out for yourself at this link.
